Los Javis Tobala is crafted in Santiago Matatlan, Oaxaca utilizing Maguey Tobala. The luscious agave is traditionally roasted in an underground oven, crushed with a horse-drawn tahona, fermented through open-air yeasts, and distilled in a copper pot still.
