MEZCAL DERRUMBES GUERRERO
The maker of Derrumbes Guerrero, Israel Ríos Bucio, uses wild maguey Penca Ancha (Agave cupreata) from Coyuca de Catalán, Guerrero. The agaves are processed in an underground pit oven and shredded mechanically before being fermented in open-air plastic barrels. The final step is double distillation in a still made from a higuera blanca tree trunk over a copper pot.
