This third expression of Derrumbes is produced exclusively from wild Salmiana Crassispina agave found in the High Plateau of San Luis Potosi. With limited trees available, Maestro Mezcalero Manuel Perez forages dry Salmiana leaves and twigs to use as fuel. The result is a remarkable, one-of-a-kind mezcal that captures the flavors of the surrounding area. Its aromatic and herbal taste from Charcas is balanced by a subtle sweetness, creating a delicate yet intense flavor.
