White:  A super limited botttling from one of the most sought after Sancerre producers, Alphonse Mellot.  Crisp, limestone-y, and deeply refreshing, the Les Romains annually scores 95+ points from critics.

Rose:  They make rosé in Sancerre?  Hell yes they do.  It’s 100% Pinot Noir and downright dangerously tasty.

Red: The 2nd wine from famed Chateau Figeac in Saint Emilion, Bordeaux.  There isn’t a better pairing for banquet filet than this one.
