Sylvie owns 1.6 of this legendary 6.7 hectare slope. In fact, it is her literal backyard as she lives right next to it.
She is one of only five producers to make Clos Saint-Jacques, which is widely believed to be one of the best wines in all of Burgundy and a Grand Cru in all but name.
Winemaking:
Depending on the vintage, 60 to 80% of the grapes are macerated whole-cluster for 13 to 14 days in open wood vats, then racked to barrel to continue fermenting and aging. The barrel breakdown is: 80% new oak, 20% “one wine” barrels.
